I know this doesn’t directly answer your question because it’s not on Oahu or Kauai, but one of the coolest things we did when we were on our honeymoon in Hawaii (went to 4 islands – didn’t make it to Kauai) was take a mule ride to the National Park on Molokai. It was the site of a former leper colony where Father Damien helped people (at least that’s what I remember about it). It was a really cool experience and a really remote island, which we liked.

If you ever get a chance, you should try it.

Never been to Oahu, but on Kauai, I would highly recommend taking a helicopter ride – you can get a great view from the air and the scenery is breathtaking! I would also suggest a catamaran/snorkeling trip. If you have access to a car, drive to Waimea Canyon – there is some great hiking and it is absolutely gorgeous. Well worth the trip!
